Asparagus casserole is a classic comfort dish, creamy and cheesy, perfect as a side for holiday meals or weeknight dinners. It’s easy to customize with breadcrumbs, cheese, or a creamy soup base.


📝 Classic Creamy Asparagus Casserole (Serves 6–8)

Ingredients

  • 1 lb (450 g) fresh asparagus, trimmed and cut into 2-inch pieces
  • 1 can (10.5 oz / 300 g) cream of mushroom soup (or cream of chicken)
  • ½ cup sour cream
  • ½ cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • ¼ cup chopped onion
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste
  • ½ cup breadcrumbs or crushed crackers (optional, for topping)
  • 2 tablespoons butter, melted (for topping)

👩‍🍳 Instructions

1️⃣ Preheat Oven

Preheat oven to 350°F (175°C). Grease a 9×13-inch casserole dish.

2️⃣ Blanch Asparagus

Bring a pot of water to boil. Blanch asparagus 2–3 minutes until bright green but slightly firm. Drain and shock in cold water to stop cooking.

3️⃣ Make Creamy Mixture

In a bowl, combine cream of mushroom soup, sour cream, cheddar cheese, Parmesan, chopped onion, garlic powder, salt, and pepper.

4️⃣ Assemble Casserole

Mix blanched asparagus with the creamy mixture. Pour into the prepared casserole dish.

5️⃣ Add Topping

If using breadcrumbs, mix with melted butter and sprinkle evenly over the casserole.

6️⃣ Bake

Bake 25–30 minutes until bubbly and golden on top.

  • For more flavor, sauté the onions before mixing.
  • Swap cheddar with Gruyère or Swiss for a nuttier flavor.
  • Add cooked mushrooms or cooked chicken for a heartier dish.
  • For a crispier topping, broil 2–3 minutes at the end.
