Here’s a rich, classic Asparagus Casserole recipe — creamy, cheesy, and perfect as a side dish for dinner or holidays.


🥘 Cheesy Asparagus Casserole

Ingredients (Serves 6–8)

  • 2 lbs fresh asparagus, trimmed and cut into 2-inch pieces
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1½ cups milk (whole milk preferred)
  • ½ cup heavy cream (optional, for extra richness)
  • 1 cup shredded cheddar cheese
  • ½ cup shredded mozzarella or Swiss cheese
  • ½ cup sour cream
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt and black pepper to taste

Topping:

  • ¾ cup breadcrumbs or crushed buttery crackers
  • 2 tbsp melted butter
  • ¼ cup grated Parmesan (optional)

Instructions

1️⃣ Preheat Oven

Preheat to 375°F (190°C). Lightly grease a 9×13-inch baking dish.


2️⃣ Blanch the Asparagus

  • Bring a pot of salted water to a boil.
  • Add asparagus and cook 2–3 minutes until bright green and slightly tender.
  • Drain and immediately rinse with cold water.
  • Spread evenly in prepared baking dish.

3️⃣ Make the Cheese Sauce

  • In a saucepan, melt butter over medium heat.
  • Whisk in flour and cook 1–2 minutes.
  • Slowly whisk in milk (and cream if using).
  • Cook until thickened (about 3–5 minutes).
  • Remove from heat and stir in cheddar, mozzarella, sour cream, garlic powder, onion powder, salt, and pepper until smooth.

4️⃣ Assemble

  • Pour sauce evenly over asparagus.
  • Mix breadcrumbs with melted butter and Parmesan.
  • Sprinkle topping over casserole.

5️⃣ Bake

Bake 25–30 minutes until bubbly and golden on top.
Broil 2–3 minutes for extra crisp topping if desired.

Let rest 5–10 minutes before serving.


💡 Variations

  • Add cooked bacon or diced ham for a heartier version.
  • Stir in sautéed mushrooms for extra flavor.
  • For a shortcut, substitute one can of cream of mushroom soup for the homemade sauce.
  • For a low-carb version, skip breadcrumbs and top with extra cheese.
