2. Prepare filling

  • In a large bowl, combine sliced apples, sugars, cinnamon, nutmeg, lemon juice, flour, and vanilla. Toss to coat.

3. Assemble pie

  1. Preheat oven to 375°F (190°C).
  2. Roll out one disc of dough and fit into a 9-inch pie pan.
  3. Pour apple filling into crust.
  4. Roll out second disc and place on top; seal edges. Cut vents for steam.
  5. Brush top with egg wash and sprinkle sugar.

4. Bake

  • Bake 50–60 minutes until crust is golden and filling is bubbly.
  • If edges brown too quickly, cover with foil.

5. Serve

  • Let pie cool 1–2 hours before slicing.
