Apple pie

Here’s a classic Apple Pie recipe — sweet, spiced, and perfectly flaky 🍎🥧.


Ingredients (for a 9-inch pie)

For the crust:

  • 2 ½ cups all-purpose flour
  • 1 tsp salt
  • 1 cup (225 g) unsalted butter, chilled and cubed
  • 6–8 tbsp ice water

For the filling:

  • 6–7 medium apples (Granny Smith or Honeycrisp), peeled, cored, and sliced
  • ¾ cup sugar
  • 2 tbsp all-purpose flour
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract (optional)

For topping:

  • 1 egg, beaten (for egg wash)
  • 1 tbsp sugar (optional)

Instructions

1. Make the crust

  1. In a bowl, combine flour and salt.
  2. Cut in butter until mixture resembles coarse crumbs.
  3. Gradually add ice water, 1 tbsp at a time, until dough comes together.
  4. Divide into 2 discs, wrap in plastic, and refrigerate for at least 1 hour.

2. Prepare the filling

  • In a large bowl, mix apple slices, sugar, flour, cinnamon, nutmeg, lemon juice, and vanilla. Set aside.

3. Assemble the pie

  1. Roll out one dough disc and line a 9-inch pie pan.
  2. Pour in the apple filling.
  3. Roll out the second disc and place over the top. Seal edges and cut slits for steam to escape.
  4. Brush with egg wash and sprinkle sugar if desired.

4. Bake

  • Preheat oven to 200°C (400°F).
  • Bake 20 minutes, then reduce temperature to 180°C (350°F) and bake 40–45 minutes until crust is golden and filling is bubbly.

5. Cool and serve

  • Let pie cool at least 1 hour before slicing to allow filling to set.
  • Serve plain or with vanilla ice cream.

💡 Tips

  • For a flakier crust, keep butter cold and handle dough minimally.
  • Mix different apple varieties for a balanced sweet-tart flavor.
  • Make ahead: pie dough can be frozen for up to 2 months.
