Here’s a classic, moist Apple Cake recipe—spiced, tender, and perfect for dessert or afternoon tea:

Classic Apple Cake (Serves 8–10)

Ingredients:

  • 2 cups (250 g) all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg (optional)
  • 1/2 cup (115 g) unsalted butter, softened
  • 1 cup (200 g) granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup (120 ml) milk
  • 2 cups peeled and diced apples (about 2 medium apples)

Optional topping:

  • 2 tbsp sugar mixed with 1 tsp cinnamon
  • Chopped nuts (walnuts or pecans)

Instructions:

  1. Preheat oven: 350°F (175°C). Grease and flour a 9-inch (23 cm) round or square cake pan.
  2. Mix dry ingredients:
    • In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. Cream butter & sugar:
    • In a large bowl, beat butter and sugar until light and fluffy.
    • Add eggs one at a time, then vanilla extract.
  4. Combine wet & dry ingredients:
    • Alternately add dry ingredients and milk to the butter mixture, beginning and ending with dry ingredients. Mix until just combined.
  5. Add apples:
    • Fold in diced apples gently.
  6. Bake:
    • Pour batter into prepared pan. Sprinkle with optional cinnamon-sugar and nuts if desired.
    • Bake 45–55 minutes, or until a toothpick inserted in the center comes out clean.
  7. Cool & serve:
    • Let cake cool in pan 10–15 minutes, then transfer to a wire rack. Serve warm or at room temperature. Optional: dust with powdered sugar.

Tips & Variations:

  • Moisture boost: Add 1/4 cup applesauce or yogurt to the batter.
  • Spices: Add ground ginger or cloves for extra warmth.
  • Caramel drizzle: Drizzle caramel sauce over the cake for a decadent finish.
  • Upside-down style: Layer apple slices at the bottom of the pan before pouring batter for an apple-top cake.
