Angel Chicken Pasta

  • Optional: 1 cup fresh spinach, 1/2 cup sun-dried tomatoes (chopped), red pepper flakes

Instructions

  1. Cook pasta
    • Cook angel hair pasta according to package instructions. Drain and set aside, reserving 1/2 cup pasta water.
  2. Cook chicken
    • Heat olive oil in a large skillet over medium-high heat.
    • Season chicken with salt and pepper, then cook 5–7 minutes until golden and cooked through. Remove and set aside.
  3. Make sauce
    • In the same skillet, sauté garlic 30 seconds until fragrant.
    • Add heavy cream, chicken broth, Italian seasoning, and Parmesan. Stir until smooth.
    • Optional: add spinach or sun-dried tomatoes. Simmer 2–3 minutes until slightly thickened.
  4. Combine pasta & chicken
    • Add cooked pasta and chicken to the sauce. Toss gently to coat.
    • If sauce is too thick, add reserved pasta water a little at a time.
  5. Serve
    • Garnish with extra Parmesan, black pepper, or fresh parsley.
