Aloo Shimla Mirch Sabzi

Aloo Shimla Mirch Sabzi (Potato & Bell Pepper Stir-Fry) is a simple, flavorful North Indian dish that’s perfect with roti or paratha. Here’s an easy home-style recipe:


🥔 Ingredients

  • 3 medium potatoes (aloo) – peeled & cubed
  • 2 bell peppers (shimla mirch / capsicum) – sliced
  • 1 onion – finely chopped (optional)
  • 2 tbsp oil
  • 1 tsp cumin seeds (zeera)
  • 1–2 green chilies – chopped
  • 1 tsp ginger-garlic paste
  • ½ tsp turmeric (haldi)
  • 1 tsp red chili powder
  • 1 tsp coriander powder (dhaniya)
  • ½ tsp garam masala
  • Salt to taste
  • Fresh coriander leaves – for garnish

🍳 Method

  1. Heat oil in a pan, add cumin seeds and let them splutter.
  2. Add onions (if using) and sauté until golden.
  3. Add ginger-garlic paste & green chilies, cook for a minute.
  4. Add potatoes, mix well, and cook covered for 8–10 minutes (stir occasionally).
  5. Add turmeric, salt, red chili powder, and coriander powder.
  6. Once potatoes are almost tender, add bell peppers.
  7. Cook uncovered for 5–7 minutes so capsicum stays slightly crunchy.
  8. Sprinkle garam masala, mix, and turn off heat.
  9. Garnish with fresh coriander.

🍽️ Serving Tips

  • Serve hot with roti, paratha, or dal-chawal
  • Add a squeeze of lemon for extra freshness
