Air Fryer Garlic Parmesan Potatoes

Serves 3–4

Ingredients

  • 1½ lbs baby potatoes (halved) or Yukon Golds (cut into 1-inch pieces)
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • ½ tsp Italian seasoning
  • ½ cup freshly grated Parmesan
  • 1 tbsp chopped fresh parsley (optional)

Instructions

1️⃣ Prep the potatoes

  • Wash and cut into evenly sized pieces.
  • Pat dry — this helps them crisp better.

2️⃣ Season

In a large bowl, toss potatoes with:

  • Olive oil
  • Garlic
  • Salt, pepper
  • Paprika
  • Italian seasoning

Mix until evenly coated.

3️⃣ Air fry

  • Preheat air fryer to 400°F (200°C) for 3–5 minutes.
  • Place potatoes in a single layer (work in batches if needed).
  • Cook 15–20 minutes, shaking basket halfway through.
  • They’re done when golden brown and fork-tender.

4️⃣ Add Parmesan

  • Immediately toss hot potatoes with Parmesan.
  • Return to air fryer for 1–2 minutes to melt and lightly crisp the cheese.

5️⃣ Finish

  • Sprinkle with fresh parsley.
  • Serve hot.

🔥 Extra Crispy Tips

  • Don’t overcrowd the basket.
  • Use freshly grated Parmesan (pre-shredded won’t crisp as well).
  • For extra crunch, add 1 tbsp cornstarch to the potatoes before oil.

Flavor Variations

  • Add a squeeze of lemon at the end 🍋
  • Toss with a little melted butter + garlic for richer flavor
  • Add red pepper flakes for heat
  • Serve with ranch, aioli, or marinara
