Here’s a simple and delicious Air Fryer Chicken and Veggies recipe — crispy on the outside, juicy on the inside, and perfectly cooked veggies 🥦🍗


Air Fryer Chicken and Veggies

Serves: 2–4
Time: ~25–30 minutes

Ingredients

  • 2–4 boneless, skinless chicken breasts or thighs
  • 2 cups mixed vegetables (broccoli, bell peppers, zucchini, carrots, or your choice)
  • 2–3 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • ½ tsp dried thyme or Italian seasoning
  • Salt & pepper, to taste
  • Optional: lemon wedges or fresh parsley for garnish

Instructions

  1. Prep ingredients
    • Cut vegetables into bite-sized pieces.
    • Pat chicken dry and season both sides with garlic powder, paprika, thyme, salt, and pepper.
  2. Toss vegetables
    • In a bowl, toss vegetables with 1 tbsp olive oil, salt, and pepper.
  3. Preheat air fryer
    • Preheat to 200°C / 400°F for 3–5 minutes.
  4. Cook chicken and veggies
    • Place chicken in the air fryer basket. Arrange vegetables around or in a separate layer (avoid overcrowding).
    • Cook 12–15 minutes, shaking the basket or flipping halfway through.
    • Check chicken internal temperature: should reach 74°C / 165°F.
  5. Serve
    • Garnish with lemon wedges or parsley. Serve immediately.

Tips & Variations

  • Extra crispy chicken: Lightly coat chicken in a thin layer of breadcrumbs or panko before air frying.
  • Spicy option: Add chili powder, smoked paprika, or cayenne to the seasoning.
  • One-pan convenience: If your air fryer basket is small, cook chicken first, then air fry veggies for 5–7 minutes.
  • Marinade: Marinate chicken 30 minutes beforehand in olive oil, lemon, and herbs for extra flavor.
