Fried rice

Here’s a simple, restaurant-style fried rice recipe that’s fast, flexible, and super flavorful.


Easy Fried Rice

Ingredients (serves 4)

  • 3 cups cooked rice, cold (day-old is best)
  • 2 tbsp oil (vegetable or sesame)
  • 2 eggs, beaten
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2–3 cloves garlic, minced
  • ½ cup cooked protein (chicken, shrimp, beef, ham, or bacon)
  • 3–4 tbsp soy sauce (to taste)
  • 1 tsp sesame oil (optional but great)
  • Salt & pepper, to taste
  • Optional garnish: green onions

Instructions

  1. Heat the pan:
    • Use a large skillet or wok over medium-high heat. Add oil.
  2. Cook the eggs:
    • Pour in beaten eggs, scramble quickly, then remove and set aside.
  3. Cook veggies & garlic:
    • Add a little more oil if needed.
    • Sauté vegetables and garlic for 2–3 minutes until fragrant.
  4. Add rice:
    • Add cold rice, breaking up clumps.
    • Spread it out and let it sit 30 seconds to crisp before stirring.
  5. Season:
    • Stir in soy sauce, sesame oil, salt, and pepper.
  6. Add protein & eggs:
    • Toss in cooked protein and scrambled eggs.
    • Stir-fry 2–3 minutes until everything is hot and evenly mixed.
  7. Serve hot:
    • Top with green onions if desired.

Pro Tips

  • Cold rice = key to non-mushy fried rice
  • Don’t overcrowd the pan—cook in batches if needed
  • Let the rice sit untouched for crispy bits
  • Taste before adding more soy sauce (it’s salty!)

Easy Variations

  • Chicken fried rice: Add diced cooked chicken
  • Shrimp fried rice: Add shrimp first, cook, remove, then add back at end
  • Pineapple fried rice: Toss in pineapple chunks for sweet-savory vibes
  • Spicy: Add chili paste or sriracha
