Here’s a simple and hearty recipe for Sausage, Peppers, and Potatoes—a classic comfort-food skillet dish that’s easy to make and packed with flavor.


Ingredients (Serves 3–4)

  • 1 lb (450 g) Italian sausage (sweet or spicy, links or sliced)
  • 3–4 medium potatoes, diced into 1-inch cubes
  • 1 large onion, sliced
  • 1–2 bell peppers, sliced (any color)
  • 2–3 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp dried oregano or Italian seasoning
  • Salt and pepper, to taste
  • Optional: red pepper flakes for heat, fresh parsley for garnish

Instructions

  1. Cook the potatoes:
    • Heat 2 tbsp olive oil in a large skillet over medium heat.
    • Add diced potatoes, season with salt, pepper, and oregano.
    • Cook 10–12 minutes, stirring occasionally, until golden and slightly tender.
  2. Cook the sausage:
    • Push potatoes to one side of the skillet and add sausage slices or whole links.
    • Cook 5–7 minutes until browned on all sides and cooked through.
  3. Add vegetables:
    • Add onions, bell peppers, and garlic.
    • Cook 5–7 minutes, stirring occasionally, until vegetables are tender.
  4. Combine and serve:
    • Mix everything together in the skillet. Adjust seasoning with salt, pepper, and red pepper flakes if desired.
    • Garnish with fresh parsley. Serve hot.

💡 Tips:

  • For softer potatoes, parboil them 5 minutes before cooking in the skillet.
  • Swap sausage for chicken sausage or smoked sausage for a different flavor.
  • You can finish under the broiler for 2–3 minutes to get extra crispy edges.
