Ingredients (Serves 4)

  • 1 lb (450 g) fresh asparagus, trimmed
  • 2 tbsp butter or olive oil
  • 2 cloves garlic, minced (optional)
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp red pepper flakes (optional for a little heat)
  • ½ cup shredded cheese (cheddar, mozzarella, or Parmesan work well)
  • 1–2 tsp lemon juice (optional, for brightness)

Instructions

  1. Prep the asparagus:
    • Wash and trim woody ends of the asparagus.
  2. Cook the asparagus:
    • Option 1: Sauté – Heat butter or oil in a skillet over medium heat. Add garlic and sauté 30 seconds. Add asparagus, season with salt and pepper, and cook 5–7 minutes, stirring occasionally, until tender-crisp.
    • Option 2: Roast – Preheat oven to 400°F (200°C). Toss asparagus with olive oil, salt, and pepper. Spread on a baking sheet and roast 10–12 minutes.
  3. Add the cheese:
    • Sprinkle shredded cheese over asparagus while still hot. Cover with a lid or foil for 1–2 minutes to melt the cheese.
  4. Finish and serve:
    • Drizzle with lemon juice if desired. Serve hot as a side dish.

  • For a crispy, golden top, broil the asparagus with cheese for 1–2 minutes after melting.
