🍗 One-Pan Garlic Herb Chicken with Potatoes & Green Beans

Ingredients (Serves 4)

  • 4 bone-in, skin-on chicken thighs (or breasts)
  • Salt & black pepper, to taste
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme or Italian seasoning
  • 2 tablespoons olive oil
  • 1 lb (450 g) baby potatoes, halved
  • 1/2 lb (225 g) green beans, trimmed
  • 4 cloves garlic, minced
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon chopped fresh parsley (for garnish)

Instructions

1️⃣ Prep the chicken

  • Preheat oven to 400°F (200°C).
  • Pat chicken dry, then season with salt, pepper, paprika, garlic powder, and thyme.

2️⃣ Arrange on a baking sheet

  1. On a large rimmed baking sheet or sheet pan, toss potatoes with 1 tablespoon olive oil, salt, and pepper. Spread in a single layer.
  2. Nestle seasoned chicken pieces among the potatoes.
  3. Roast 20–25 minutes.

3️⃣ Add green beans and garlic

  • Toss green beans with remaining olive oil, garlic, salt, and pepper.
  • Add green beans to the pan around chicken and potatoes.
  • Roast another 10–15 minutes, until chicken reaches an internal temp of 165°F (74°C), potatoes are tender, and green beans are crisp-tender.

4️⃣ Finish and serve

  • Drizzle with lemon juice and sprinkle with fresh parsley.
  • Serve hot, straight from the pan.

  • Even cooking: Cut potatoes into uniform pieces to cook evenly with chicken.
  • Extra flavor: Add halved cherry tomatoes or sliced onions for a colorful addition.
