Elegant White Chocolate Raspberry Cheesecake

Ingredients

Crust

  • 1½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • ½ cup unsalted butter, melted

Raspberry Swirl

  • 1½ cups fresh or frozen raspberries
  • ¼ cup sugar
  • 1 tsp lemon juice
  • 1 tsp cornstarch + 1 tbsp water

Cheesecake Filling

  • 24 oz (3 blocks) cream cheese, softened
  • ¾ cup granulated sugar
  • 8 oz white chocolate, melted and slightly cooled
  • 3 large eggs, room temperature
  • 1 tsp vanilla extract
  • ½ cup heavy cream or sour cream
  • Pinch of salt

Instructions

1. Make the Raspberry Swirl

  1. In a saucepan, combine raspberries, sugar, and lemon juice.
  2. Simmer 8–10 minutes, stirring and crushing berries.
  3. Stir in cornstarch slurry and cook until thickened.
  4. Strain through a fine sieve to remove seeds (optional but elegant).
  5. Cool completely.

2. Prepare the Crust

  1. Preheat oven to 325°F (165°C).
  2. Mix crumbs, sugar, and melted butter.
  3. Press firmly into the bottom of a 9-inch springform pan.
  4. Bake for 10 minutes, then cool.

3. Make the Filling

  1. Beat cream cheese and sugar until smooth (low speed).
  2. Mix in melted white chocolate.
  3. Add eggs one at a time, mixing gently.
  4. Blend in vanilla, cream (or sour cream), and salt.

4. Assemble

  1. Pour filling over crust.
  2. Spoon raspberry sauce on top.
  3. Swirl gently with a knife for a marble effect.

5. Bake

  1. Wrap the pan in foil and place in a water bath.
  2. Bake 55–65 minutes, until edges are set and center slightly jiggles.
  3. Turn oven off, crack door, cool 1 hour inside oven.
  4. Refrigerate at least 4 hours, preferably overnight.

Elegant Finishing Touches

  • White chocolate curls or shavings
  • Fresh raspberries
  • Light dusting of powdered sugar
  • Optional white chocolate ganache drizzle

  • Use high-quality white chocolate (bars, not chips).
  • Do not overmix—this keeps the cheesecake creamy.
