🍽 Classic Beef Stroganoff (Serves 4)

Ingredients

  • 1 lb beef sirloin or tenderloin, thinly sliced
  • Salt and black pepper
  • 2 tbsp butter or oil
  • 1 small onion, finely chopped
  • 8 oz mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 tbsp flour
  • 1 cup beef broth
  • 1 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 3/4 cup sour cream
  • 8 oz egg noodles
  • Fresh parsley (optional garnish)

  1. Cook noodles:
    Boil egg noodles according to package directions. Drain and set aside.
  2. Sear the beef:
    Season beef with salt and pepper. In a large skillet over medium-high heat, melt butter and quickly sear beef 1–2 minutes per side. Remove and set aside (don’t overcook).
  3. Cook vegetables:
    In the same pan, sauté onion and mushrooms until softened and lightly browned (5–7 minutes). Add garlic and cook 30 seconds.
  4. Make the sauce:
    Sprinkle flour over the vegetables and stir for 1 minute. Gradually add beef broth, stirring to prevent lumps. Stir in Dijon and Worcestershire. Simmer until slightly thickened.
  5. Finish with sour cream:
    Reduce heat to low. Stir in sour cream until smooth (do not boil). Return beef to the skillet and heat gently for 2–3 minutes.
  6. Serve:
    Spoon over egg noodles and garnish with parsley.
