Here’s a comforting, flavorful recipe for Smothered Chicken with Green Beans—tender chicken simmered in rich gravy with perfectly cooked green beans all in one pan.


🍗 Smothered Chicken with Green Beans

Ingredients (Serves 4)

  • 4 boneless, skinless chicken breasts (or thighs)
  • 1 lb fresh green beans, trimmed
  • 1 small onion, sliced
  • 2 cloves garlic, minced
  • 2 tbsp butter or oil
  • 2 tbsp flour
  • 2 cups chicken broth
  • 1/2 cup heavy cream (optional, for creamier gravy)
  • 1 tsp paprika
  • 1/2 tsp dried thyme
  • Salt and black pepper to taste

Instructions

  1. Season & sear chicken:
    Season chicken with salt, pepper, and paprika. Heat butter or oil in a large skillet over medium heat. Sear chicken 4–5 minutes per side until golden (not fully cooked). Remove and set aside.
  2. Sauté aromatics:
    In the same skillet, add onion and cook 3–4 minutes until softened. Add garlic and cook 30 seconds.
  3. Make the gravy:
    Sprinkle flour over the onions and stir for 1–2 minutes to cook off the raw flour taste. Slowly whisk in chicken broth until smooth. Add thyme. Let simmer until slightly thickened.
  4. Add chicken & green beans:
    Return chicken to the skillet and spoon gravy over it. Add green beans around the chicken. Cover and simmer 15–20 minutes until chicken is cooked through (165°F / 74°C) and beans are tender.
  5. Finish:
    Stir in heavy cream if using. Taste and adjust seasoning.
  6. Serve:
    Spoon gravy over chicken and green beans. Serve with mashed potatoes, rice, or crusty bread.

Variations

  • Cheesy version: Sprinkle shredded mozzarella or cheddar over the chicken in the last 5 minutes and cover until melted.
  • Bacon twist: Add cooked bacon pieces for extra flavor.
  • Slow cooker option: Layer green beans on bottom, chicken on top, pour gravy mixture over, and cook on low 5–6 hours.
