Here’s a simple and flavorful Slow Cooker Pork Roast recipe—perfect for a tender, juicy roast with minimal hands-on time:


Ingredients (Serves 4–6)

  • 3–4 lbs pork roast (shoulder, butt, or loin)
  • 1 large onion, sliced
  • 3–4 cloves garlic, minced
  • 1 cup chicken broth (or apple juice for a sweeter flavor)
  • 2 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp dried thyme or rosemary
  • Optional: 1–2 apples, sliced (for a sweet touch)
  • Optional: 2 tbsp olive oil (for searing)

Instructions

  1. Optional sear for extra flavor:
    Rub the pork roast with salt, pepper, and paprika. Heat olive oil in a skillet over medium-high heat and brown the roast 2–3 minutes per side.
  2. Prepare the slow cooker:
    Place onion slices and garlic at the bottom. Add pork roast on top. If using, layer apple slices around the roast.
  3. Add liquid and seasonings:
    Pour chicken broth (or apple juice) around the roast. Sprinkle with thyme or rosemary.
  4. Cook:
    Cover and cook on low for 6–8 hours or high for 3–4 hours, until pork is tender and easily pulls apart with a fork.
  5. Serve:
    Remove roast and slice or shred. Spoon juices from the slow cooker over the meat. Serve with potatoes, rice, or vegetables.

Tips & Variations

  • Gravy: Thicken the juices with a cornstarch slurry (1 tbsp cornstarch + 2 tbsp water) for a quick gravy.
  • Flavor twist: Add a splash of soy sauce, balsamic vinegar, or honey for a deeper, slightly sweet flavor.
  • Vegetables: Add carrots, potatoes, or parsnips in the last 2–3 hours of cooking for a complete meal.
