🥗 Black Bean Salad

Ingredients (Serves 4)

  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels (fresh, canned, or frozen)
  • 1 red bell pepper, diced
  • 1/2 red onion, finely diced
  • 1–2 cloves garlic, minced
  • 1–2 small tomatoes, diced (optional)
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp olive oil
  • 1 tbsp lime juice (or lemon juice)
  • 1 tsp ground cumin
  • Salt and black pepper, to taste
  • 1/4 tsp chili powder or cayenne (optional, for heat)

Instructions

1️⃣ Combine Ingredients

  • In a large bowl, mix black beans, corn, bell pepper, onion, tomatoes, and cilantro.

2️⃣ Make Dressing

  • In a small bowl, whisk together olive oil, lime juice, cumin, chili powder, salt, and pepper.

3️⃣ Toss Salad

  • Pour dressing over the salad and toss until evenly coated.

4️⃣ Chill & Serve

  • Chill 20–30 minutes for flavors to meld (optional).
  • Serve as a side dish, on tacos, or over greens for a light meal.

Tips & Variations

  • Extra flavor: Add diced avocado or roasted red peppers.
  • Protein boost: Mix in cooked quinoa or grilled chicken.
  • Tangy twist: Add a splash of apple cider vinegar or a teaspoon of honey to the dressing.
