Ingredients (Serves 4)

  • 4–6 bratwurst sausages
  • 2 tbsp butter or oil
  • 2 medium onions, thinly sliced
  • 2 apples (Granny Smith or Honeycrisp), peeled, cored, and sliced
  • 1 cup beer (lager or ale works best)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp thyme (optional)
  • 1–2 tsp brown sugar (optional, for extra caramelization)

Instructions

1️⃣ Preheat Oven

  • Preheat oven to 375°F (190°C).
  • Lightly grease a baking dish or ovenproof skillet.

2️⃣ Caramelize Onions & Apples

  • In a skillet over medium heat, melt butter.
  • Add onions and cook 8–10 minutes until soft and lightly golden.
  • Add apple slices, salt, pepper, thyme, and brown sugar.
  • Cook another 5 minutes until apples begin to soften.

3️⃣ Brown the Brats

  • In the same skillet (or separate pan), lightly brown bratwurst on all sides, 3–4 minutes.

4️⃣ Assemble for Oven

  • Transfer brats to the baking dish.
  • Pour beer over the brats.
  • Top with caramelized onions and apples.

5️⃣ Braise in Oven

  • Cover with foil and bake 25–30 minutes, until brats are cooked through (internal temp 160°F / 71°C).

6️⃣ Serve

  • Serve brats with onions and apples over buns, mashed potatoes, or roasted vegetables.
