Here’s a hearty, flavorful Bacon Cheeseburger Meatloaf — juicy ground beef, melty cheese, and crispy bacon on top.


🥓🍔 Bacon Cheeseburger Meatloaf

Ingredients (Serves 6–8)

  • 2 lbs ground beef (80/20 for juiciness)
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 2 large eggs
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp smoked paprika (optional)
  • 1 1/2 cups shredded cheddar cheese
  • 6–8 slices bacon
  • 1/2 cup ketchup (for topping)
  • 1 tbsp Worcestershire sauce (optional)

Instructions

1️⃣ Preheat

  • Preheat oven to 375°F (190°C).
  • Line a baking sheet with parchment paper or lightly grease a loaf pan.

2️⃣ Mix Meatloaf

  • In a large bowl, combine ground beef, breadcrumbs, milk, eggs, onion, garlic, salt, pepper, paprika, and Worcestershire sauce.
  • Mix gently — avoid overworking to keep meatloaf tender.

3️⃣ Form Loaf

  • Shape mixture into a loaf on the prepared baking sheet or in a loaf pan.
  • Make a shallow well along the top and sprinkle cheddar cheese inside.

4️⃣ Add Bacon & Topping

  • Lay bacon slices over the top.
  • Spread ketchup over the bacon for a glaze.

5️⃣ Bake

  • Bake 50–60 minutes, until internal temperature reaches 160°F (71°C).
  • For crispier bacon, broil 2–3 minutes at the end.

6️⃣ Rest & Serve

  • Let rest 5–10 minutes before slicing.
  • Serve with mashed potatoes, roasted vegetables, or a side salad.

Tips & Variations

  • Cheese options: Use American, Swiss, or pepper jack for different flavors.
  • Extra flavor: Mix in diced pickles or sautéed mushrooms for a burger twist.
  • Mini meatloaves: Make individual portions for quicker cooking and fun presentation.
