Ingredients (Serves 6)

  • 4 cups broccoli florets (fresh or frozen, thawed)
  • 2 tbsp butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 1 cup milk
  • 1/2 cup chicken or vegetable broth
  • 1 tsp Dijon mustard (optional)
  • Salt and black pepper, to taste
  • 1 1/2 cups shredded sharp cheddar cheese
  • 1/2 cup breadcrumbs or crushed crackers (optional, for topping)
  • 1 tbsp butter (for topping, optional)

Instructions

1️⃣ Preheat

  • Preheat oven to 350°F (175°C).
  • Grease a 9×9-inch baking dish.

2️⃣ Cook Broccoli

  • Steam or blanch broccoli for 3–4 minutes until just tender. Drain and set aside.

3️⃣ Make Cheese Sauce

  • In a skillet, melt 2 tbsp butter over medium heat.
  • Sauté onions and garlic until soft.
  • Stir in flour and cook 1–2 minutes to form a roux.
  • Gradually whisk in milk and broth until smooth and slightly thickened.
  • Stir in mustard (if using) and season with salt and pepper.
  • Remove from heat and stir in 1 cup of shredded cheddar until melted.

4️⃣ Assemble Casserole

  • Toss broccoli in the cheese sauce and transfer to prepared baking dish.
  • Sprinkle remaining 1/2 cup cheddar on top.
  • Optional: mix breadcrumbs with 1 tbsp butter and sprinkle over the top for a crispy topping.

5️⃣ Bake

  • Bake 20–25 minutes, until bubbly and golden on top.

6️⃣ Serve

  • Let cool 5 minutes before serving.

  • Add cooked rice or pasta for a heartier casserole.
  • Mix in cooked bacon or ham for extra flavor.
  • Substitute Gruyère or Monterey Jack for cheddar for a different cheesy taste.
