Here’s a hearty, comfort-food style bacon cheeseburger meatloaf — juicy, cheesy, and packed with burger flavor.


🥓🧀 Bacon Cheeseburger Meatloaf

Ingredients (Serves 6–8)

Meatloaf:

  • 2 lbs (900g) ground beef (80/20 works best)
  • 1 cup breadcrumbs
  • 2 eggs
  • 1/2 cup milk
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1/4 cup ketchup
  • 1 tbsp yellow mustard
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 1/2 cups shredded cheddar cheese
  • 8–10 slices bacon

Glaze:

  • 1/3 cup ketchup
  • 1 tbsp brown sugar
  • 1 tsp mustard

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with foil or lightly grease a loaf pan.
  2. Mix the meatloaf base:
    In a large bowl, combine ground beef, breadcrumbs, eggs, milk, onion, garlic, ketchup, mustard, Worcestershire sauce, salt, and pepper. Mix gently—don’t overwork it.
  3. Add the cheese:
    Fold in shredded cheddar, or for a cheesy center, press half the meat mixture into a loaf shape, add cheese in the middle, then cover with remaining meat and seal the edges.
  4. Shape & wrap with bacon:
    Form into a loaf and lay bacon strips over the top, tucking them underneath slightly.
  5. Add glaze:
    Mix glaze ingredients and spread half over the top.
  6. Bake:
    Bake for 45–60 minutes, or until internal temperature reaches 160°F (71°C).
    Brush with remaining glaze during the last 10–15 minutes.
  7. Rest:
    Let it rest 10 minutes before slicing.

  • Roasted vegetables
  • Garlic green beans
  • Or serve on toasted buns like a thick meatloaf burger 🍔
