🌽 Corn Fritters

Corn fritters are small, fried cakes made from a batter of corn, flour, and eggs. They’re crispy on the outside, tender on the inside, and slightly sweet — perfect as a side dish or snack.

🛒 Ingredients (Makes ~12 fritters)

  • 1 cup corn kernels (fresh, canned, or frozen & thawed)
  • ½ cup all-purpose flour
  • ½ tsp baking powder
  • 2 tbsp sugar (optional, for slightly sweet fritters)
  • ¼ tsp salt
  • 1/8 tsp black pepper
  • 1 egg
  • ¼ cup milk
  • 2–3 tbsp chopped green onions or chives (optional)
  • Oil for frying (vegetable or canola)

🍳 Instructions

1️⃣ Prepare Batter

  • In a bowl, whisk egg and milk together.
  • Stir in flour, baking powder, sugar, salt, and pepper until smooth.
  • Fold in corn and green onions.

2️⃣ Fry Fritters

  • Heat 2–3 tbsp oil in a skillet over medium heat.
  • Drop spoonfuls of batter into the hot oil.
  • Flatten slightly with the back of the spoon.
  • Cook 2–3 minutes per side until golden brown.

3️⃣ Drain & Serve

  • Remove fritters and drain on paper towels.
  • Serve hot, plain or with dipping sauces like sour cream, honey, or salsa.

🌟 Tips

  • Use a nonstick or well-seasoned skillet for even cooking.
  • Batter should be thick enough to hold shape but not dry — adjust milk if needed.
  • Optional add-ins: diced red bell pepper, shredded cheese, or jalapeños for spice.

If you want, I can give you a southern-style corn fritter recipe with sweet and savory balance or a crispy oven-baked version.
