🍲 Hearty Beef and Vegetable Soup

🥄 Ingredients (Serves ~6)

  • 1–1½ lbs beef (stew meat like chuck or sirloin), cut into cubes
  • 2–3 tbsp olive oil
  • 1 medium onion, diced
  • 2–3 cloves garlic, minced
  • 2–3 carrots, sliced
  • 2–3 celery stalks, sliced
  • 2–3 medium potatoes, cut into chunks
  • 1 cup green beans (fresh or frozen)
  • 1 can (14–15 oz) diced tomatoes (with juice)
  • 4–6 cups beef broth
  • 1 tsp dried thyme (or Italian seasoning)
  • Salt & black pepper, to taste

1️⃣ Brown the beef:
Heat oil in a large pot over medium‑high heat. Brown the beef cubes on all sides until nicely seared, then remove and set aside. (The Campbell’s Company)

2️⃣ Sauté veggies:

3️⃣ Build the soup:
