Crockpot Sausage and Potatoes

Serves: 4–6
Cook Time: 6–7 hours (low) or 3–4 hours (high)


Ingredients

  • 1½ lbs smoked sausage (kielbasa or andouille), sliced
  • 2 lbs baby potatoes, halved (or large potatoes, chopped)
  • 1 small onion, sliced
  • 3 cloves garlic, minced
  • 1 bell pepper, sliced (optional)
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • ½ tsp paprika
  • ½ tsp black pepper
  • ½ tsp salt (adjust depending on sausage saltiness)
  • ¼ cup chicken broth

Instructions

1️⃣ Prep Ingredients

  • Slice sausage and chop potatoes into even-sized pieces.

2️⃣ Season & Combine

  • Add potatoes, sausage, onion, garlic, and bell pepper to crockpot.
  • Drizzle with olive oil.
  • Sprinkle Italian seasoning, paprika, salt, and pepper over everything.
  • Pour in chicken broth.
  • Toss gently to combine.

3️⃣ Cook

  • Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until potatoes are fork-tender.

4️⃣ Serve

  • Stir before serving.
  • Garnish with chopped parsley or shredded Parmesan if desired.

Optional Add-Ins

  • Green beans (add during last 1–2 hours)
  • Shredded cheese sprinkled on top at the end
  • Red pepper flakes for heat

Extra Flavor Tip

For crispier sausage, quickly brown slices in a skillet before adding to the crockpot.
