Honeycrisp Apple Broccoli Salad

Serves: 4–6
Time: ~15 minutes (+ chilling time)


Ingredients

  • 4 cups fresh broccoli florets, chopped small
  • 1 large Honeycrisp apple, diced (leave peel on)
  • ¼ cup red onion, finely diced
  • ⅓ cup dried cranberries
  • ⅓ cup sunflower seeds or sliced almonds
  • ½ cup shredded sharp cheddar cheese (optional)
  • 4 slices cooked bacon, crumbled (optional)

Creamy Dressing

  • ½ cup mayonnaise
  • 1½ tbsp apple cider vinegar
  • 1–2 tbsp honey
  • Salt and black pepper, to taste

Instructions

1️⃣ Prep the Veggies

  • Chop broccoli into small bite-sized pieces.
  • Dice the apple just before mixing to prevent browning.

2️⃣ Make the Dressing

  • Whisk together mayonnaise, apple cider vinegar, honey, salt, and pepper until smooth.

3️⃣ Combine

  • In a large bowl, mix broccoli, apple, onion, cranberries, seeds, cheese, and bacon (if using).
  • Pour dressing over and toss until evenly coated.

4️⃣ Chill

  • Refrigerate for at least 30–60 minutes before serving for best flavor.

Tips & Variations

  • For a lighter version, use half Greek yogurt and half mayo.
  • Add a squeeze of lemon to keep apples extra fresh.
  • Swap cranberries for raisins or chopped dates.
