Here’s a simple, flavorful Chicken Legs with Rice and Green Beans recipe — a complete one-pan meal 🍗🥬🍚


Chicken Legs with Rice and Green Beans

Serves: 4
Time: ~45–50 minutes


Ingredients

  • 4 chicken legs (drumsticks and/or thighs)
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 2 cups fresh green beans, trimmed
  • 2 tbsp olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • ½ tsp dried thyme or Italian seasoning
  • Salt and pepper, to taste
  • Optional: lemon wedges for serving

Instructions

1️⃣ Season the Chicken

  • Pat chicken legs dry.
  • Rub with olive oil, paprika, thyme, salt, and pepper.

2️⃣ Brown the Chicken

  • In a large skillet or ovenproof pan, heat 1 tbsp olive oil over medium-high heat.
  • Sear chicken legs 4–5 minutes per side until golden. Remove and set aside.

3️⃣ Sauté Aromatics

  • In the same pan, add onion and garlic. Sauté 2–3 minutes until fragrant.

4️⃣ Cook the Rice

  • Add rice to the pan and stir to coat with oil and aromatics.
  • Pour in chicken broth, bring to a simmer.

5️⃣ Combine & Simmer

  • Nestle chicken legs on top of rice.
  • Cover, reduce heat to low, and simmer 25–30 minutes until rice is tender and chicken reaches 75°C (165°F).

6️⃣ Add Green Beans

  • In the last 5–7 minutes, add green beans on top. Cover and cook until tender but still crisp.

7️⃣ Serve

  • Serve hot, optionally with a squeeze of lemon over the chicken.

Tips & Variations

  • For extra flavor, add a pinch of smoked paprika or cayenne to the chicken.
  • Swap long-grain rice for brown rice — cook an extra 10–15 minutes and add more broth.
  • Add chopped tomatoes or bell peppers for color and flavor.
