Here’s a comforting, classic Congee recipe — silky rice porridge often served for breakfast or when you need something soothing 🍚✨


Classic Congee (Rice Porridge)

Serves: 4
Time: 1–1.5 hours


Ingredients

  • 1 cup white rice (short or medium grain preferred)
  • 8 cups water or chicken broth (for richer flavor)
  • 1-inch piece of ginger, sliced
  • 1 tsp salt (adjust to taste)
  • Optional toppings: sliced green onions, soy sauce, sesame oil, shredded chicken, preserved egg, fried shallots, cilantro

Instructions

1️⃣ Rinse the Rice

  • Rinse rice under cold water until water runs clear.

2️⃣ Cook the Congee

  • In a large pot, combine rice, water or broth, and ginger.
  • Bring to a boil, then reduce heat to low.
  • Simmer 1–1.5 hours, stirring occasionally, until rice breaks down and the mixture becomes thick and creamy.

3️⃣ Season

  • Add salt to taste.

4️⃣ Serve

  • Ladle congee into bowls.
  • Add desired toppings: shredded chicken, sliced green onions, soy sauce, sesame oil, or fried shallots.

Tips & Variations

  • For a quicker version, use a rice cooker or Instant Pot on porridge setting (usually 25–30 minutes).
  • Add vegetables like mushrooms, corn, or spinach for a heartier congee.
  • Adjust water or broth to achieve your preferred thickness — more liquid for a thinner porridge, less for a thicker texture.
