Pan-Seared Pork Chops with Garlic and Herbs

Ingredients (serves 2):

  • 2 bone-in or boneless pork chops (about 200–250g each)
  • Salt and black pepper, to taste
  • 1 tsp paprika (optional for extra color)
  • 2 tbsp olive oil or butter
  • 2 cloves garlic, smashed
  • 1–2 sprigs fresh rosemary or thyme
  • Optional: 1 tbsp butter for basting

Instructions:

  1. Prep the pork chops:
    • Pat the pork chops dry with paper towels.
    • Season both sides with salt, pepper, and paprika.
  2. Cook the pork chops:
    • Heat olive oil (or a mix of oil and butter) in a skillet over medium-high heat.
    • Add pork chops and sear 3–4 minutes per side until golden brown.
  3. Add aromatics:
    • Add garlic and herbs to the pan. If using, add 1 tbsp butter and spoon melted butter over the pork chops while cooking.
  4. Check doneness:
    • Cook until internal temperature reaches 63°C (145°F) for juicy, slightly pink meat. Remove from pan and let rest 3–5 minutes.
  5. Serve:
    • Serve pork chops with your choice of sides—mashed potatoes, roasted vegetables, or a simple salad.

Optional tips:

  • For extra flavor, marinate the pork chops 30 minutes in olive oil, garlic, and herbs before cooking.
  • Pan sauce idea: After removing pork, deglaze pan with a splash of chicken broth or white wine and a little cream, simmering until slightly thickened.
