Here’s a classic Birthday Cake recipe that’s moist, fluffy, and perfect for celebrations:


Ingredients (for a 2-layer 8–9 inch cake)

Cake:

  • 2 1/2 cups all-purpose flour
  • 2 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 tbsp vanilla extract
  • 1 cup whole milk
  • Optional: 1/2 cup sour cream or yogurt for extra moistness

Buttercream Frosting:

  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 2–3 tbsp heavy cream or milk
  • 2 tsp vanilla extract
  • Optional: food coloring for decoration

Instructions

  1. Preheat oven: 350°F (175°C). Grease and flour two 8–9 inch round cake pans.
  2. Mix dry ingredients: In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. Cream butter and sugar: In a separate bowl, beat butter and sugar until light and fluffy (3–5 minutes).
  4. Add eggs and vanilla: Beat in eggs one at a time, then stir in vanilla extract.
  5. Combine wet and dry ingredients:
    • Alternate adding dry ingredients and milk to the butter mixture, starting and ending with dry ingredients.
    • Mix until just combined. Fold in sour cream if using.
  6. Bake: Divide batter evenly between pans. Bake 25–30 minutes or until a toothpick inserted comes out clean. Cool in pans 10 minutes, then transfer to a wire rack to cool completely.
  7. Make frosting: Beat butter until creamy. Gradually add powdered sugar, vanilla, and milk/cream until smooth and fluffy. Adjust consistency as needed.
  8. Assemble cake:
    • Place one cake layer on a serving plate. Spread frosting on top.
    • Add the second layer and frost the top and sides. Decorate with sprinkles, fruits, or piping as desired.

  • For extra flavor, you can add a tablespoon of almond extract or lemon zest to the batter.
  • To prevent a dry cake, don’t overmix once you add the flour.
