Turtle Caramel Cake

Posted on February 23, 2026 by Admin

Here’s a decadent Turtle Caramel Cake recipe—a rich chocolate cake layered with caramel, pecans, and topped with chocolate ganache, inspired by the classic turtle candy flavors.

🍰 Turtle Caramel Cake

Ingredients (Serves 8–12)

For the Chocolate Cake:

  • 1 ¾ cups all-purpose flour
  • 1 ¾ cups granulated sugar
  • ¾ cup cocoa powder
  • 2 tsp baking powder
  • 1 ½ tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup buttermilk
  • ½ cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup hot water or hot coffee

For the Caramel-Pecan Layer:

  • 1 cup caramel sauce (store-bought or homemade)
  • 1 cup chopped pecans, toasted

For the Chocolate Ganache:

  • 1 cup heavy cream
  • 8 oz (225 g) semi-sweet chocolate, chopped

Optional Garnish:

  • Whole pecans, caramel drizzle

Steps

  1. Bake the Chocolate Cake
    • Preheat oven to 350 °F (175 °C). Grease and flour two 9-inch round cake pans.
    • In a large bowl, whisk together flour, sugar, cocoa, baking powder, baking soda, and salt.
    • Add eggs, buttermilk, oil, and vanilla. Beat until smooth.
    • Stir in hot water/coffee slowly until batter is combined.
    • Divide batter between prepared pans. Bake 30–35 min, or until a toothpick comes out clean. Cool completely.
  2. Prepare Caramel-Pecan Layer
    • Mix caramel sauce with chopped toasted pecans.
  3. Assemble the Cake
    • Place one cake layer on a serving plate. Spread half of the caramel-pecan mixture over the top.
    • Place second cake layer on top. Spread remaining caramel-pecan mixture.
  4. Make the Chocolate Ganache
    • Heat cream in a small saucepan until just simmering.
    • Pour over chopped chocolate in a bowl. Let sit 2–3 min, then stir until smooth.
    • Pour ganache over the cake, letting it drip over the sides.
  5. Garnish and Serve
    • Top with whole pecans and extra caramel drizzle if desired.
    • Let set 20–30 min before slicing.

Tips

  • Use strong coffee in the batter for a deeper chocolate flavor.
  • Caramel sauce can be homemade or store-bought—just make sure it’s thick enough to layer.
  • For extra richness, chill the cake for 1 hour before slicing to allow ganache and caramel to firm slightly.

If you want, I can make a quick version of Turtle Caramel Cake in a single 9×13 pan that layers everything without multiple round cakes, making it faster but just as decadent.

Do you want me to do that?
