Lazy Bacon-Potato Crunch (Serves 3–4)

Ingredients

  • 4 medium potatoes, peeled and grated or diced
  • 6 slices of bacon, chopped
  • 1 small onion, finely chopped
  • 1 cup shredded cheddar cheese (or cheese of choice)
  • 2–3 tbsp butter or oil
  • Salt & pepper, to taste
  • Optional: ½ tsp smoked paprika or garlic powder
  • Optional garnish: chopped chives or parsley

Instructions

  1. Cook the bacon
    • In a large skillet over medium heat, cook chopped bacon until crisp.
    • Remove bacon and drain on paper towels, leaving some bacon fat in the skillet.
  2. Cook the potatoes
    • Add butter or oil to the skillet if needed.
    • Add grated or diced potatoes and onion. Season with salt, pepper, and optional spices.
    • Cook over medium heat, stirring occasionally, until potatoes are tender and golden brown (about 10–15 minutes).
  3. Add bacon & cheese
    • Stir in the cooked bacon.
    • Sprinkle shredded cheese over the top, cover the skillet, and let it melt for 2–3 minutes.
  4. Serve
    • Garnish with fresh herbs if desired.
    • Serve hot as a breakfast, brunch, or side dish.

Tips

  • Crispier potatoes: Let potatoes sit undisturbed for a few minutes to form a crust before stirring
  • Shortcut: Use frozen hash browns instead of fresh potatoes for even faster prep
  • Add-ins: Diced bell peppers, mushrooms, or jalapeños for extra flavor

Variations

  • Cheesy twist: Mix the cheese into the potatoes instead of just on top for a gooey texture
  • Spicy: Add a pinch of cayenne or chili flakes
  • Breakfast skillet: Top with a fried or poached egg for a hearty morning meal
