Here’s a warm and comforting Garlic Soup recipe — rich, flavorful, and perfect for garlic lovers.

🧄 Garlic Soup

🛒 Ingredients (Serves 4)

  • 2–3 tbsp olive oil or butter
  • 1 large onion, diced
  • 6–8 cloves garlic, minced (adjust to taste)
  • 4 cups chicken or vegetable broth
  • 1 cup potatoes, peeled and diced (optional, for creaminess)
  • ½ tsp salt (adjust to taste)
  • ¼ tsp black pepper
  • ½ tsp dried thyme or rosemary (optional)
  • ½ cup heavy cream or milk (optional, for a creamy version)
  • Optional garnish: fresh parsley, croutons, or grated Parmesan

👩‍🍳 Instructions

1️⃣ Sauté Garlic & Onion

  1. In a large pot, heat olive oil or butter over medium heat.
  2. Sauté onions for 3–4 minutes until translucent.
  3. Add garlic and cook 1–2 minutes until fragrant, but not browned.

2️⃣ Add Broth & Potatoes

  1. Add broth and diced potatoes (if using).
  2. Season with salt, pepper, and herbs.
  3. Bring to a boil, then reduce heat and simmer 15–20 minutes until potatoes are tender.

3️⃣ Blend (Optional)

  • For a smooth, creamy soup, blend with an immersion blender or in batches in a countertop blender until smooth.

4️⃣ Finish the Soup

  • Stir in cream or milk if desired.
  • Adjust seasoning.
  • Heat gently until warmed through.

5️⃣ Serve

  • Serve hot, garnished with fresh parsley, croutons, or grated Parmesan.

🔥 Tips & Variations

  • Extra garlic punch: Roast garlic cloves before adding for a sweeter, milder flavor.
  • Cheesy version: Stir in ½ cup grated Parmesan or Gruyère for richness.
  • Herbal flavor: Add bay leaf while simmering and remove before blending.
  • Vegan option: Use olive oil and vegetable broth; skip the cream or use coconut milk.
  • Make ahead: Soup keeps well in the fridge for 2–3 days; reheat gently.
