  • 1 lb (450 g) ground beef
  • 1 small onion, diced

  • 1 can (14.5 oz / 410 g) diced tomatoes
  • 1 cup frozen corn or peas
  • 1 cup cooked pasta or rice
  • 1 tsp dried Italian seasoning
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 cup shredded cheddar or mozzarella cheese
  • 1–2 tbsp olive oil

👩‍🍳 Instructions

1️⃣ Cook the Beef

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat.
  3. Add ground beef and cook until browned. Drain excess fat.
  4. Add onion, garlic, and bell pepper; sauté 3–4 minutes until softened.

2️⃣ Combine Ingredients

  1. Stir in diced tomatoes, Italian seasoning, salt, and pepper.
  2. Add cooked pasta or rice and frozen vegetables; mix well.

3️⃣ Assemble the Casserole

  1. Transfer mixture to a greased 9×13-inch baking dish.
  2. Sprinkle shredded cheese evenly on top.

4️⃣ Bake

  • Bake 20–25 minutes, until cheese is melted and bubbly.

5️⃣ Serve

  • Let cool 5 minutes before serving.
  • Optional: garnish with fresh parsley or green onions.
