Here’s a hearty and healthy Cabbage Soup recipe — light, flavorful, and perfect for a comforting meal.


🥣 Cabbage Soup

🛒 Ingredients (Serves 4–6)

  • 1 small head green cabbage, chopped (about 6 cups)
  • 2 medium carrots, sliced
  • 2 stalks celery, diced
  • 1 onion, chopped
  • 2–3 cloves garlic, minced
  • 1 can (14.5 oz / 410 g) diced tomatoes
  • 6 cups vegetable or chicken broth
  • 1 tsp dried thyme or Italian seasoning
  • 1 bay leaf (optional)
  • Salt & black pepper to taste
  • 1–2 tbsp olive oil
  • Optional: 1 lb (450 g) ground beef, sausage, or chicken

👩‍🍳 Instructions

1️⃣ Sauté Vegetables (Optional if adding meat)

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery; cook 5–6 minutes until softened.
  3. Add garlic and cook 30 seconds.
  4. If using ground beef or sausage, brown it now and drain excess fat.

2️⃣ Add Broth & Cabbage

  1. Stir in chopped cabbage, diced tomatoes (with juice), broth, thyme, and bay leaf.
  2. Bring to a boil, then reduce heat to simmer.

3️⃣ Simmer

  • Cover and simmer 20–30 minutes, until cabbage and vegetables are tender.

4️⃣ Season & Serve

  • Remove bay leaf.
  • Taste and adjust with salt, pepper, or a splash of vinegar for brightness.
  • Serve hot, optionally with bread or crackers.

  • Hearty version: Add potatoes, corn, or beans for more substance.
  • Spicy: Add red pepper flakes or a dash of hot sauce.
