🌮 Walking Taco Casserole

🛒 Ingredients (Serves 4–6)

  • 1 lb (450g) ground beef or turkey
  • 1 packet taco seasoning (or homemade: chili powder, cumin, paprika, garlic powder, onion powder, salt, pepper)
  • 1 cup salsa
  • 1 cup shredded cheddar or Mexican blend cheese
  • 1 cup crushed tortilla chips (or Doritos for extra flavor)
  • 1 small onion, diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • Optional toppings: sour cream, diced tomatoes, sliced jalapeños, chopped lettuce, avocado, green onions

👩‍🍳 Instructions

1️⃣ Cook the Meat

  1. Preheat oven to 375°F (190°C).
  2. In a skillet over medium heat, sauté onion until soft.
  3. Add ground beef and cook until browned, breaking into small pieces.
  4. Drain excess fat and stir in taco seasoning, salsa, black beans, and corn.

2️⃣ Assemble Casserole

  1. In a greased 9×13-inch baking dish, spread half of the crushed tortilla chips.
  2. Pour meat mixture over chips.
  3. Sprinkle remaining crushed chips on top, then top with shredded cheese.

3️⃣ Bake

  • Cover with foil and bake 20–25 minutes until cheese is melted and bubbly.
  • Optional: uncover for the last 5 minutes to crisp the top layer of chips.

4️⃣ Serve

  • Top individual servings with sour cream, lettuce, tomatoes, jalapeños, avocado, or green onions.
