🥘 Creamy Beef & Mushroom Rice Bake

A comforting, all-in-one casserole with tender beef, earthy mushrooms, creamy sauce, and fluffy rice — perfect for an easy weeknight dinner.


🛒 Ingredients (Serves 4–6)

  • 1 lb (450g) ground beef
  • 1 cup uncooked long-grain white rice
  • 2 cups beef broth
  • 1 cup milk or cream
  • 1 cup shredded cheddar or mozzarella cheese
  • 8 oz (225g) mushrooms, sliced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp Worcestershire sauce
  • 1 tsp dried thyme or Italian seasoning
  • Salt & pepper to taste
  • 1–2 tbsp olive oil or butter

Optional: parsley or chives for garnish


👩‍🍳 Instructions

1️⃣ Preheat Oven

  • Preheat oven to 375°F (190°C).
  • Lightly grease a 9×13-inch baking dish.

2️⃣ Cook Beef & Vegetables

  1. Heat oil in a skillet over medium-high heat.
  2. Add onions and garlic; sauté 2–3 minutes until softened.
  3. Add mushrooms and cook until slightly browned.
  4. Add ground beef; season with salt, pepper, and thyme.
  5. Cook until beef is browned and fully cooked. Drain excess fat if needed.

3️⃣ Mix Sauce & Rice

  1. In a bowl, combine beef broth, milk/cream, Worcestershire sauce, and ½ cup cheese.
  2. Stir in uncooked rice.

4️⃣ Assemble & Bake

  1. Add cooked beef and mushroom mixture to the rice and sauce; mix well.
  2. Pour into prepared baking dish.
  3. Top with remaining cheese.
  4. Cover with foil and bake 35–40 minutes.
  5. Remove foil and bake an additional 10 minutes until cheese is melted and slightly golden.

5️⃣ Serve

  • Let cool 5 minutes before serving.
  • Garnish with fresh parsley or chives.

  • Extra Creamy: Use half-and-half or full cream instead of milk.
  • Vegetables: Add peas, carrots, or bell peppers for more color and nutrition.
