🌮 Walking Taco Casserole
A fun, layered casserole inspired by walking tacos — all the taco flavors you love baked into a comforting dish.
📝 Ingredients
- 1 lb ground beef or turkey
- 1 packet taco seasoning (or homemade: chili powder, cumin, paprika, garlic powder, onion powder, salt)
- 1 (15 oz) can corn, drained
- 1 (15 oz) can black beans, drained and rinsed
- 1 cup salsa
- 2 cups crushed tortilla chips (or Fritos)
- 1 ½ cups shredded cheddar cheese (or Mexican blend)
- Optional toppings: sour cream, chopped tomatoes, sliced olives, green onions, jalapeños, shredded lettuce
👩🍳 Instructions
- Preheat oven: 350°F (175°C) and grease a 9×13-inch baking dish.
- Cook meat: Brown ground beef in a skillet over medium heat. Drain excess fat. Add taco seasoning and ½ cup water. Simmer 5 minutes.
- Layer casserole:
- Spread half the crushed chips on the bottom of the dish.
- Layer meat mixture, corn, beans, and salsa.
- Top with remaining chips and sprinkle cheese evenly over the top.
- Bake: 15–20 minutes until cheese is melted and bubbly.
- Serve: Add optional toppings before serving for a “walking taco” experience.
✨ Tips
- For extra creaminess, mix ½ cup sour cream into the meat layer.
- Use crushed Doritos or Fritos for a flavored twist.
- This can be assembled ahead of time and baked just before serving.
If you want, I can give a slow-cooker version that keeps it warm for parties or potlucks.
