🌮 Walking Taco Casserole

A fun, layered casserole inspired by walking tacos — all the taco flavors you love baked into a comforting dish.


📝 Ingredients

  • 1 lb ground beef or turkey
  • 1 packet taco seasoning (or homemade: chili powder, cumin, paprika, garlic powder, onion powder, salt)
  • 1 (15 oz) can corn, drained
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 cup salsa
  • 2 cups crushed tortilla chips (or Fritos)
  • 1 ½ cups shredded cheddar cheese (or Mexican blend)
  • Optional toppings: sour cream, chopped tomatoes, sliced olives, green onions, jalapeños, shredded lettuce

👩‍🍳 Instructions

  1. Preheat oven: 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Cook meat: Brown ground beef in a skillet over medium heat. Drain excess fat. Add taco seasoning and ½ cup water. Simmer 5 minutes.
  3. Layer casserole:
    • Spread half the crushed chips on the bottom of the dish.
    • Layer meat mixture, corn, beans, and salsa.
    • Top with remaining chips and sprinkle cheese evenly over the top.
  4. Bake: 15–20 minutes until cheese is melted and bubbly.
  5. Serve: Add optional toppings before serving for a “walking taco” experience.

✨ Tips

  • For extra creaminess, mix ½ cup sour cream into the meat layer.
  • Use crushed Doritos or Fritos for a flavored twist.
  • This can be assembled ahead of time and baked just before serving.
