🍌 Rich Banana Bread

This is a super moist, buttery banana bread with deep banana flavor and a tender crumb — perfect for using up very ripe bananas.

📝 Ingredients

  • ½ cup (1 stick) unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 ½ cups mashed very ripe bananas (about 3–4 bananas)
  • ¼ cup sour cream (or plain Greek yogurt)
  • 1 tsp vanilla extract
  • 1 ¾ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • ½ tsp cinnamon (optional)
  • ¾ cup chopped walnuts or chocolate chips (optional)

👩‍🍳 Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. Cream butter & sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each.
  4. Mix in bananas, sour cream, and vanilla until combined.
  5. Combine dry ingredients in a separate bowl (flour, baking soda, salt, cinnamon).
  6. Fold dry into wet just until combined — don’t overmix.
  7. Stir in nuts or chocolate chips if using.
  8. Bake 55–65 minutes, or until a toothpick inserted in the center comes out clean.
  9. Cool in pan 10 minutes, then transfer to a rack.

✨ Make It Extra Rich

  • Replace ¼ cup sugar with brown sugar for deeper flavor.
  • Add 2 tablespoons heavy cream for a softer crumb.
  • Sprinkle coarse sugar on top before baking for a sweet crust.

If you’d like, I can also give you a bakery-style version with a high domed top or a cream cheese swirl version.
