Here’s a simple, juicy Chicken Skewers recipe—perfect for grilling, oven, or stovetop 🍗🔥


Chicken Skewers (Serves 4)

Ingredients

Chicken

  • 500 g (1 lb) boneless, skinless chicken breasts or thighs, cut into 1–2 inch cubes

Marinade

  • 3 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tbsp lemon juice
  • 1 tsp paprika
  • 1 tsp dried oregano or thyme
  • ½ tsp salt
  • ¼ tsp black pepper
  • Optional: ½ tsp chili flakes for heat

Optional Extras

  • Bell peppers, onion, zucchini (cut into similar-sized chunks)

Instructions

  1. Marinate
    • Combine olive oil, garlic, lemon juice, and spices.
    • Toss chicken cubes (and optional veggies) in marinade.
    • Cover and refrigerate at least 30 minutes, preferably 2–3 hours.
  2. Prepare skewers
    • If using wooden skewers, soak in water 20–30 minutes.
    • Thread chicken (and veggies) evenly onto skewers.
  3. Cook
    Grill: Medium-high heat, 10–12 minutes, turning every 3–4 minutes.
    Oven: Preheat 200°C / 400°F, bake 15–20 minutes, turning halfway.
    Stovetop: Heat a grill pan or skillet, cook 10–12 minutes, turning frequently.
  4. Serve
    • Optional: squeeze of lemon, sprinkle of fresh herbs, or a dipping sauce like tzatziki, yogurt, or garlic mayo.

Tips for Juicy Chicken

  • Cut pieces evenly so they cook uniformly
  • Don’t overcook; chicken cooks quickly on skewers
  • Marinate longer for more flavor

Variations

  • Teriyaki: Soy sauce, ginger, garlic, honey
  • Mediterranean: Olive oil, lemon, oregano, garlic, paprika
  • Spicy: Add chili powder, smoked paprika, and cayenne
  • Vegetarian: Swap chicken with halloumi, mushrooms, and bell peppers
