Ingredients (Serves 4)

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1 tsp garlic powder (optional)
  • 2 tbsp olive oil or butter
  • 8 oz (225g) mushrooms, sliced (white or cremini)
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped
  • ½ cup chicken broth
  • 1 cup heavy cream (or half-and-half for a lighter version)
  • ½ cup grated Parmesan cheese
  • 1 tsp dried thyme or Italian seasoning
  • 1 tbsp chopped fresh parsley (optional, for garnish)

Instructions

1️⃣ Prep the Chicken

  • Season chicken breasts with salt, pepper, and garlic powder.
  • Heat olive oil or butter in a large skillet over medium-high heat.
  • Sear chicken 4–5 minutes per side until golden brown (they don’t need to be fully cooked).
  • Remove chicken from skillet and set aside.

2️⃣ Cook the Mushrooms

  • In the same skillet, add a bit more oil or butter if needed.
  • Sauté mushrooms for 4–5 minutes until browned.
  • Add onions and garlic; cook 2–3 minutes until fragrant.

3️⃣ Make the Cream Sauce

  • Pour in chicken broth, scraping up any brown bits from the skillet.
  • Stir in heavy cream, Parmesan, and thyme/Italian seasoning.
  • Simmer 3–5 minutes until the sauce thickens slightly.
  • Season with salt and pepper to taste.

4️⃣ Combine Chicken and Sauce

  • Return chicken breasts to the skillet.
  • Spoon sauce over the chicken and simmer 5–7 minutes until chicken reaches 165°F (74°C) internally and sauce is creamy.

5️⃣ Serve

  • Garnish with fresh parsley.
  • Serve with rice, mashed potatoes, pasta, or crusty bread to soak up the sauce.

💡 Tips

  • For extra flavor, deglaze the pan with a splash of white wine before adding cream.
  • Add spinach or sun-dried tomatoes for a colorful twist.
  • Leftovers can be stored in the fridge for 2–3 days. Reheat gently to avoid separating the cream.
  • Use chicken thighs instead of breasts for juicier results.
