Here’s a bold, over-the-top version of The Empire City Stacked Chimichanga — crispy tortillas layered with seasoned meat, beans, cheese, and sauce. Big flavor, big portions!

Ingredients (Serves 4)

Filling:

  • 1 lb ground beef (or shredded chicken)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp taco seasoning
  • ½ cup tomato sauce or salsa
  • 1 cup refried beans
  • 1 cup cooked Mexican rice (optional but recommended)
  • 1 ½ cups shredded cheese (cheddar or Mexican blend)

Assembly:

  • 4 large flour tortillas
  • Oil for frying (about 1–2 cups, shallow fry)

Toppings:

  • Sour cream
  • Guacamole or sliced avocado
  • Salsa or enchilada sauce
  • Shredded lettuce
  • Diced tomatoes
  • Jalapeños (optional)
  • Chopped cilantro

Instructions

1️⃣ Prepare the Filling

  • In a skillet over medium heat, cook ground beef until browned; drain excess fat.
  • Add onion and garlic; cook 2–3 minutes.
  • Stir in taco seasoning and tomato sauce/salsa. Simmer 5 minutes until thickened.

2️⃣ Warm & Layer

  • Warm tortillas slightly to make them flexible.
  • Spread refried beans on one tortilla.
  • Add seasoned meat, a layer of rice (if using), and shredded cheese.
  • Place another tortilla on top and repeat layers to create a stacked effect (2 tortillas per stack works great).

3️⃣ Fry the Stack

  • Carefully transfer stack to hot oil (medium heat).
  • Fry 2–3 minutes per side until golden and crispy.
  • Drain on paper towels.

(Alternative: Brush lightly with oil and bake at 400°F / 200°C for 15–20 minutes, flipping halfway.)


4️⃣ Top & Serve

  • Drizzle with sour cream and salsa or enchilada sauce.
  • Add lettuce, tomatoes, jalapeños, avocado, and cilantro.
  • Slice like a pie and serve immediately.

💡 Tips

  • Use shredded rotisserie chicken for a quick shortcut.
  • Add black beans or corn for extra texture.
  • For a “loaded” version, pour warm queso over the top.
  • Keep stacks smaller for easier flipping when frying.
