  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 small onion, diced

  • 1 (14.5 oz) can diced tomatoes
  • 6 cups beef broth
  • 1 tsp Italian seasoning

  • 9–12 oz refrigerated cheese tortellini
  • 2 cups fresh spinach or kale (optional)
  • Grated Parmesan, for serving

🔥 Instructions

1. Brown the Beef

  • Heat olive oil in a large pot over medium heat.
  • Add ground beef and cook until browned.
  • Drain excess fat if necessary.

2. Sauté the Vegetables

  • Add onion, carrots, and celery. Cook 4–5 minutes until softened.
  • Stir in garlic and cook 30 seconds until fragrant.

3. Build the Soup Base

  • Add diced tomatoes, beef broth, Italian seasoning, oregano, salt, and pepper.
  • Bring to a boil, then reduce to a simmer 15 minutes.

4. Add Tortellini

  • Stir in tortellini and cook according to package directions (usually 3–5 minutes) until tender.

5. Finish with Greens

  • Add spinach or kale in the last 2 minutes, just until wilted.
