Here’s a simple and flavorful Slow Cooker Italian Herb Potatoes recipe—perfectly tender and infused with herbs:


Slow Cooker Italian Herb Potatoes (Serves 4–6)

Ingredients:

  • 2 lbs baby potatoes or Yukon gold potatoes, halved or quartered
  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp dried thyme
  • 1/2 tsp red pepper flakes (optional, for a little heat)
  • Salt and black pepper, to taste
  • 1/4 cup grated Parmesan cheese (optional, for serving)
  • Fresh parsley, chopped, for garnish

Instructions:

  1. Prep the potatoes:
    • Toss potatoes with olive oil, garlic, oregano, basil, thyme, red pepper flakes, salt, and pepper.
  2. Transfer to slow cooker:
    • Place the seasoned potatoes in the slow cooker.
    • Stir to coat evenly.
  3. Cook:
    • Cover and cook on low for 6–7 hours or high for 3–4 hours, until potatoes are tender when pierced with a fork.
  4. Optional finishing touches:
    • Sprinkle with Parmesan cheese and chopped fresh parsley before serving.

Tips:

  • For extra flavor, add a few halved cherry tomatoes or sliced onions to cook alongside the potatoes.
  • You can also toss in cooked Italian sausage or chicken pieces for a full meal.
