Here’s a simple and flavorful Crockpot Chicken recipe you can try. It’s versatile, perfect for meal prep, and requires minimal effort.


Ingredients

  • 4 boneless, skinless chicken breasts (or thighs for juicier meat)
  • 1 cup chicken broth
  • 1/2 cup diced onions
  • 2–3 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme (or Italian seasoning)
  • 1/2 teaspoon salt (adjust to taste)
  • 1/4 teaspoon black pepper
  • 1/2 cup carrots, sliced (optional)
  • 1/2 cup celery, sliced (optional)
  • 2 tablespoons cornstarch + 2 tablespoons water (for thickening, optional)

Instructions

  1. Prepare the Crockpot: Lightly spray the crockpot with cooking spray.
  2. Layer Ingredients: Place the chicken breasts in the bottom. Sprinkle with salt, pepper, paprika, and thyme. Add onions, garlic, carrots, and celery on top.
  3. Add Liquid: Pour the chicken broth over everything.
  4. Cook: Cover and cook on low for 6–7 hours or high for 3–4 hours, until the chicken is fully cooked and tender.
  5. Optional Thickening: If you want a thicker sauce, mix cornstarch and water in a small bowl. Stir into the crockpot and cook on high for another 10–15 minutes.
  6. Serve: Shred the chicken or serve whole with the veggies and sauce. Great over rice, pasta, or mashed potatoes!
