Here’s a simple and versatile croquette recipe—crispy outside, creamy inside 😋

Classic Potato Croquettes (Serves 4)

Ingredients

  • 2 cups mashed potatoes (about 3 medium potatoes)
  • 1/2 cup grated cheese (cheddar, mozzarella, or your favorite)
  • 1 egg (plus 1 for breading)
  • 1/4 cup all-purpose flour
  • Salt & pepper, to taste
  • Optional: chopped herbs (parsley, chives), cooked ham, or cooked vegetables
  • 1 cup breadcrumbs
  • Oil for frying

Instructions

  1. Prepare the filling:
    • Mash the potatoes if not already done.
    • Mix in cheese, salt, pepper, and optional add-ins.
    • Let it cool slightly so it’s easier to shape.
  2. Shape the croquettes:
    • Roll mixture into small cylinders or balls (about 1–2 inches).
  3. Bread the croquettes:
    • Lightly coat each croquette in flour.
    • Dip into beaten egg.
    • Roll in breadcrumbs until fully coated.
  4. Cook:
    • Heat oil in a skillet over medium heat.
    • Fry croquettes 2–3 minutes per side until golden brown and crispy.
    • Drain on paper towels.

Tips & Variations

  • Baked version: Spray croquettes with oil and bake at 400°F (200°C) for 15–20 min, turning halfway.
  • Protein option: Add cooked minced meat, chicken, or fish to the potato mix.
  • Cheesy center: Insert a small cube of cheese inside each croquette before breading.

If you want, I can give a super-quick microwave version too—ready in 10 minutes!
