Beef and Rice Casserole

Here’s a classic, easy Beef and Rice Casserole—hearty, comforting, and great for weeknights 🍲

Beef and Rice Casserole (Serves 4–6)

Ingredients

  • 1 lb (450 g) ground beef
  • 1 cup uncooked long-grain rice
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 1 can (10.5 oz / 300 g) cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • 1 tbsp olive oil
  • 1 tsp paprika
  • ½ tsp dried thyme or Italian seasoning
  • Salt & black pepper, to taste
  • (Optional) 1 cup frozen peas or mixed vegetables

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a skillet, heat oil and sauté onion until soft. Add garlic and beef; cook until browned. Season with salt, pepper, paprika, and thyme.
  3. In a large bowl, mix cooked beef, uncooked rice, broth, soup, and vegetables (if using).
  4. Transfer to a greased casserole dish. Cover tightly with foil.
  5. Bake for 45 minutes.
  6. Remove foil, sprinkle cheese on top, and bake uncovered 10–15 minutes until bubbly and rice is tender.
  7. Rest 5 minutes before serving.

Tips

  • Swap cream of mushroom for cream of chicken if preferred
  • Add a crunchy topping: buttered breadcrumbs or fried onions
  • Make it spicy with chili flakes or hot sauce
