Beef and Rice Casserole (Serves 4–6)
Ingredients
- 1 lb (450 g) ground beef
- 1 cup uncooked long-grain rice
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 cups beef broth
- 1 can (10.5 oz / 300 g) cream of mushroom soup
- 1 cup shredded cheddar cheese
- 1 tbsp olive oil
- 1 tsp paprika
- ½ tsp dried thyme or Italian seasoning
- Salt & black pepper, to taste
- (Optional) 1 cup frozen peas or mixed vegetables
Instructions
- Preheat oven to 350°F (175°C).
- In a skillet, heat oil and sauté onion until soft. Add garlic and beef; cook until browned. Season with salt, pepper, paprika, and thyme.
- In a large bowl, mix cooked beef, uncooked rice, broth, soup, and vegetables (if using).
- Transfer to a greased casserole dish. Cover tightly with foil.
- Bake for 45 minutes.
- Remove foil, sprinkle cheese on top, and bake uncovered 10–15 minutes until bubbly and rice is tender.
- Rest 5 minutes before serving.
Tips
- Swap cream of mushroom for cream of chicken if preferred
- Add a crunchy topping: buttered breadcrumbs or fried onions
- Make it spicy with chili flakes or hot sauce
