Pineapple Coconut Cake

Ingredients

Cake:

  • 2½ cups all-purpose flour
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ cup unsalted butter, softened
  • 1½ cups granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 cup coconut milk (full-fat works best)
  • 1 cup crushed pineapple, well-drained
  • ¾ cup sweetened shredded coconut

Frosting (Cream Cheese Coconut Frosting):

  • 8 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • 3–4 cups powdered sugar
  • 1 tsp vanilla extract
  • 2–3 tbsp coconut milk

Optional Garnish:

  • Toasted coconut flakes
  • Pineapple slices or chunks

Instructions

  1. Prep:
    Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Dry ingredients:
    In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. Cream butter & sugar:
    Beat butter and sugar until light and fluffy. Add eggs one at a time, then vanilla.
  4. Combine:
    Add dry ingredients alternately with coconut milk, mixing just until combined.
  5. Fold in pineapple & coconut:
    Gently fold in crushed pineapple and shredded coconut.
  6. Bake:
    Divide batter evenly between pans. Bake 25–30 minutes, or until a toothpick inserted comes out clean.
  7. Cool:
    Let cakes cool in pans for 10 minutes, then turn out onto wire racks to cool completely.
  8. Make frosting:
    Beat cream cheese and butter until smooth. Add powdered sugar, vanilla, and coconut milk until fluffy.
  9. Assemble:
    Frost the cooled cake layers. Garnish with toasted coconut and pineapple if desired.

Tips for Best Results

  • Drain pineapple very well to avoid a soggy cake.
  • Want extra coconut flavor? Add ½ tsp coconut extract to the batter.
  • For a poke-cake twist, poke holes and pour sweetened coconut milk over warm cake layers before frosting.
