Chocolate rice krispie balls

Here’s a simple, no-bake favorite that’s perfect for holidays, parties, or just a sweet snack.


🍫 Chocolate Rice Krispie Balls

Ingredients

  • 3 cups Rice Krispies cereal
  • 1 cup creamy peanut butter
  • 1/2 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 2 cups powdered sugar
  • 2 cups semi-sweet chocolate chips
  • 1 tablespoon coconut oil or shortening (for smooth melting)

Instructions

  1. Mix the base:
    In a large bowl, beat together peanut butter, butter, and vanilla until smooth.
  2. Add sugar:
    Gradually mix in powdered sugar until fully combined.
  3. Fold in cereal:
    Gently stir in Rice Krispies until evenly distributed.
  4. Shape:
    Roll into 1-inch balls and place on a parchment-lined baking sheet.
    Chill for 30–60 minutes until firm.
  5. Melt chocolate:
    Microwave chocolate chips with coconut oil in 20–30 second intervals, stirring between, until smooth.
  6. Dip:
    Using a fork, dip each ball into melted chocolate, letting excess drip off.
    Return to parchment and chill until set.

✨ Optional Add-Ins

  • Mini chocolate chips in the filling
  • Drizzle with white chocolate
  • Sprinkle with flaky sea salt
  • Use almond butter instead of peanut butter

Store in an airtight container in the fridge up to 1 week (or freeze up to 2 months).
