Creamy Potato Hamburger Soup

Ingredients (6–8 servings)

  • 1 lb ground beef
  • 4–5 medium potatoes, peeled and diced
  • 1 medium onion, chopped
  • 2–3 carrots, sliced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup milk or half-and-half
  • ½ cup shredded cheddar cheese (optional, for garnish)
  • 2 tbsp butter or olive oil
  • 2 tbsp all-purpose flour
  • 1 tsp salt (adjust to taste)
  • ½ tsp black pepper
  • ½ tsp paprika (optional)
  • 1 tsp dried thyme or Italian seasoning
  • Optional toppings: chopped green onions, crumbled bacon

Instructions (Stovetop)

  1. Cook the beef
    In a large pot, cook ground beef over medium heat until browned. Drain excess fat and set aside.
  2. Sauté vegetables
    In the same pot, melt butter or heat olive oil. Add onion, garlic, carrots, and celery. Cook 5–7 minutes until softened.
  3. Make roux for creaminess
    Sprinkle flour over vegetables and stir for 1–2 minutes to cook out the raw flour taste.
  4. Add liquids & potatoes
    Slowly stir in beef broth and milk. Add diced potatoes, cooked ground beef, salt, pepper, paprika, and thyme.
  5. Simmer
    Bring soup to a boil, then reduce heat to low and simmer 20–25 minutes, until potatoes are tender and soup thickens.
  6. Serve
    Ladle into bowls and garnish with cheddar cheese, green onions, or bacon if desired.

Slow Cooker Variation

  1. Brown beef and sauté onions, garlic, carrots, and celery.
  2. Place cooked beef and vegetables in the slow cooker. Add diced potatoes, seasonings, and 4 cups beef broth.
  3. Cook on low 6–7 hours or high 3–4 hours, until potatoes are tender.
  4. About 30 minutes before serving, stir in milk and flour mixture (or heavy cream) to thicken.
  5. Garnish and serve.

Tips

  • Yukon Gold potatoes work great for creamy texture.
  • For extra richness, use half-and-half or add a dollop of sour cream before serving.
  • You can add corn, peas, or green beans for more veggies.
